For rolling over your previous 401 k account to a different company yes this can be done. Typically to avoid penalties and losses you would want to do a 401(k) rollover. However I believe you are talking about something like rolling it over into a brokerage IRA account. With the brokerage IRA account you will have several options to invest your money.

Do not do the rollover in your name - this will not cause major tax implications. If you wish to invest ifurher then go to a bank or a stock broker. Keep things safe with your next egg!
